Living Beyond Cancer - A Virtual 7-Part Program for Optimizing Life After Cancer for Survivors & their Loved Ones - Begins 9/8/23

Join Dr. Robert Ellis, DO, Ashley Boudet, ND and Chef Mark Reinfeld as they demystify the lifestyle modification protocols known to increase survivorship during cancer remission. From how to set up your kitchen for success, to simple plant-based recipes you can feed to your family and the basics of plant-based nutrition, this series is built upon evidence-based consensus from the American Society of Clinical Oncology, National Institutes of Health, and National Comprehensive Cancer Network as well as the recommended lifestyle modifications of MD Anderson on Survivorship. The focus will be on three pillars: plant-based nutrition, mindfulness and exercise.

When: All classes from 10am-11:15am MT on the following dates: Friday 9/8, 9/15, 9/22, 9/29, 10/6, 10/13 and 10/27. Check in with Dr. Bob on Monday 9/25.

Course Overview:

Week 1: Introduction to the program. The three pillars. Current compelling research on the importance of these for health maintenance.

Week 2: How to set up your kitchen for success, overview on how plants are medicine and how nature provides. Easy recipes and meal planning.

Week 3: Nutrition 101 ultra simplified part 1: macronutrients, super simple recipes. Getting your protein.

Mid course check in with Dr. Bob

Week 4: Nutrition 101 ultra simplified part 2: micronutrients, superfoods, nutrient-density, healthy aging, bountiful breakfasts. Extra session with Dr. Ellis. Check in- how are you integrating this info so far? How can we best support you?

Week 5: Digestion, fermented foods, food intolerances, quick and easy lunches. Importance of daily movement. Pick one way you can move your body every day.

Week 6: Flavors, aromas, colors, and kitchen remedies, teas & other medicinal beverages. Mind body connection. Doable and delicious dinners. Introduction to the power of conscious breathing.

Week 7: History of diet trends, focus on food not single nutrients. Batch cooking. Shopping tips and tricks, reading labels. Healthy snacks and desserts. What comes next?

Presenter Bios

Dr Robert Ellis, DO, PhD 

Dr Ellis is a board certified medical oncologist and integrative medicine specialist. In addition to his osteopathic medical degree, he has a doctorate in Immunology. He is also trained in plant based nutrition, plant based cooking and is a certified culinary medicine specialist. Dr Ellis is interested in the holistic approach to cancer prevention and treatment and has been in practice for 30 years, recently retiring in May 2022. 

He is currently on the teaching faculty of the College of Osteopathic Medicine of the Pacific, and The School of Medicine of Washington State University. 

Ashley Boudet, ND  

Ashley is a Naturopathic Doctor trained in Primary Care Medicine at The National College of Natural Medicine. She is the coauthor of The Ultimate Age Defying Plan, is board certified by the Oregon Board of Naturopathic Medicine and is an executive board member of the International Congress of Naturopathic Medicine. As a Naturopathic Doctor, she is committed to promoting a connection to nature as a pathway to healing. 

During her many years of studying, observing, practicing, and living this medicine from a place of deep curiosity, she began to understand that the true meaning of wellness lies within the individual, and continually evolves. From this understanding she accepts a call to support others on their own personal quests for healing. She is currently offering nutrition and lifestyle educational programs on a variety of nourishing topics that harness the power of connection by creating a space for growth and learning within a shared community,

Chef Mark Reinfeld

An award-winning chef, educator and authority on plant-based cuisine, Chef Mark Reinfeld has over 25 years experience preparing innovative vegan and raw food cuisine. He has written eight acclaimed books and conducts virtual and in-person culinary trainings around the world. 

In 2017, Chef Mark was inducted into the Vegetarian Hall of Fame. He was the founding chef of The Blossoming Lotus Restaurant, voted "Best Restaurant on Kaua’i". Mark is a recipient of a Platinum Carrot Award from the Aspen Center of Integral Health. His first cookbook, Vegan Fusion World Cuisine, was named “Best Vegetarian Cookbook in the USA" and has a foreword written by Dr. Jane Goodall. 

Since then, Mark has authored seven more books including the bestselling 30-Minute Vegan series, as well as his latest books detailing the links between health and plant-based diets.

He serves as the Executive Chef for the North American Vegetarian Society’s Summerfest and offers vegan consulting services, including chef trainings and recipe development, for clients such as Google, Whole Foods, Kroger, Danone, The Humane Society, Bon Appetit Management, Sabra, Aramark, Sodexo and more.
